Dee's Irish Fresh Apple Cake-
Dee Avery-Simmons is a great chef working under Culinary Director, Raleigh Dowling. Her Apple Cake was a big hit recently with many requests for the recipe. here it is.
3 C. a/p flour
1 C. brown sugar
1C. white sugar
1-1/4 C. safflower or canola oil
2 eggs
3 C. chopped peeled apples
1C. walnuts cut chunky
1/2 T. good cinnamon or to taste
1 t. salt
2 t. baking soda
Whisk eggs with oil
mix all dry well, including apples and nuts.
mix dry and wet together with a wooden spoon (will be very dense and heavy, keep mixing until all dry is incorporated.
pack into tube pan or 2 loaf pans.
bake 325 degrees
1 to 1-1/2 hours or until pick comes out clean.
is good with caramel sauce or whipped cream, or just dusted with xxx sugar.
must be completely cooled before cutting!!!
